There are columns that only the HM and Recruiter/admin can see, but what if we want to hide columns from the HM - hiring manager, so only the recruiter and admin.

Olivia Lee Hi Olivia, I found a workaround that might address your issue. For my team, we want recruiters to have access to all pipeline stages, and hiring managers/interviewers to ONLY have access to interview stages. This is how we did it:
1) The first step is to create your own personal roles (as you've done), and NOT to use the BreezyHR default hiring manager roles (with the locked icon). It seems like you've done this already.
I've shared our team's role allocations below in case your situation is similar to mine. For ours, we use the term "Recruiters" and "Interviewers"
2) Once that's done, go into your pipeline stages. This is usually customised. Turn on "Only Visible to Hiring Managers" for stages you DO NOT want the interviewers to see.
In my case, I do not want hiring managers to see applications and rejections, so i turned it on for those pipeline stages.
3) MOST IMPORTANT: In each position's roles, assign the hiring managers the relevant role. For us, we assigned "Interviewers". These people aren't able to see the applied and rejected pipeline stages.

Shi Min Teh Hello, yes I do use this BUT the prebuilt account access types do allow other things AND for a new use just setting something up, it could get confusing. (ie you can not delete the hiring manager role, but you can add "Use Me hiring manager" role and that would work. But again, then you can not hid columns from regular interviewers that you want the hiring manager to see. This is where your workaround does not work.

The best I can do without mored detail on what you'd want from me is this.
I want to be able to select which role can see/interact with which columns.
Recruiter - all columns
hiring manager - most columns
Interviewers: only the columns they are interviewing for (we have many rounds, and not always the same interviewers in each round). Does that mean the interviewers have access to all rounds of the process, even if they are not involved?
